How lid and airlock works. gases create during fermentation,jar is airtight. force gases escape through airlock water chamber and finally release from the pinholes on top cap . airlock is one-way valve,let gases escape ,keep air out . 1 Clean your favorite vegetables, such as radishes or carrots,ginger and let them dry. Put it into a glass fermentation tank. The stems of chili peppers cannot be directly removed by hand, leaving the bottom on the chili peppers to prevent water from getting into the jar.
